I was wondering if ERC20 tokens are still useful today and if people still create projects around them? I know the ICO 'feast' is kind of over and that was the main purpose people were launching these tokens for.

Although basically every ERC20 token has its own functions and uses. But the fact is when their platform is launched, the ERC20 token has no function at all. Its looks the most of them only accept fiat as payment instrument on its platform. So, I don't know what actually the function of ERC20 tokens! Greetings to the community,
