Possible to setup a functioning gaming rig, I imagine I really only need to run one 1080 TI for gaming, but then be able to fire up both for mining -- if so what tower would accommodate this?

The gigabyte z270. For about 110 from newegg

Has three slots .  

Or the Aorus  mobo costs about 169.

Intel i5 7500 is good.

Ram I don't have any preference
Ssd how big do you need it?

Also if you buy the Aorus mobo it takes a pcie ssd which means less wires.
No Sata. No power cable for the ssd.

both work up to 5 cards for mining .  the aorus has more features and is pretty hot with good meds.

 the rosewill case will let you see the lights.  if you use 2 cards in slots it should be pretty cool
