I'm worried too much more cfm on the fans will make the computer extremely loud? What're your thoughts on this?

GPU fans are 10x's louder than any of the case fans I have some of my cases have 5 case fans and 2 GPUs are way louder

For a 2 x GTX 1080 Ti gaming/mining PC I would get a FE GPU or one with a blower style cooler for the bottom GPU. It helps allot to keep your top GPU from baking since it dumps most of the heat outside of the case. That is the setup I use in my personal PC and it works well for either mining or gaming.
What style is your top gpu in the setup?

both work up to 5 cards for mining .  the aorus has more features and is pretty hot with good leds.

The cheaper mobo linked has 6 pci-e slots. Will it work with up to 6 cards? Will every mobo support GPUs up to the number of pci-e slots available?

I own both mobos  both do 5 cards easy peasy.

I won't test a sixth on principle.  as my belief is  6 card rigs are for mid level mining  30 plus cards.  And why should I test for a guy that  benefits from my work and does not give me a dime.

3,4,5 card rigs are for a miner like me a garage miner  with a few rigs.

You won't go over 750 with today's efficiency, and going for a higher wattage PSU is an unnecessary cost. Cube case is better due to the deisng but it's up to you. 1080 tis are workhorses and they run just fine in about any setting. Just make sure to get good fans and install them in the correct places.
Can you elaborate on why the cube case is better, is it the simple fact that it's "less cramped" a lot of the research I do just returns BS promo for both sides
I'm more interested in function over form as it'll mine 99% of the time vs gaming
As far as correct places for the fans, is this dictated within the case, again I apologize I've never built a PC

I tend to prioritize top and bottom fans then side fans if there are any. Make sure to get high CFM fans and prioritize installation of the larger diameter fans. Also make sure to put the PSU fan downwards instead of up if possible as it wil further reduce heat. Cube cases tend to have worse airflow and are smaller, creating less dead spots for air (at least that's my theory, I use open air most of the time). Cube cases also have large fans which can sometimes result in quieter operation, I know many that use huge 140mm fans.

Also with the GB 1080 TI, people report it spitting a ton of heat all over the MB & CPU -- what MB do you think will be best to alleviate this issue?

The gigabyte z270. For about 110 from newegg

Has three slots .  

Or the Aorus  mobo costs about 169.

Intel i5 7500 is good.

Ram I don't have any preference
Ssd how big do you need it?

Also if you buy the Aorus mobo it takes a pcie ssd which means less wires.
No Sata. No power cable for the ssd.
