You can try following exchanges that do not ask for KYC. And these are As follows.
1) Binance
2) Bybit
3) Bitmax
4) Kucoin
5) MEXC      etc.
Where did you copy that list from?

Except Kucoin and MEXC the rest all require KYC as far as I know.
If we talk about zero KYC exchanges, Kucoin and MEXC should be excluded too since there's a chance they will ask KYC in the future. Especially Kucoin there's few cases they ask KYC, but after contact them in this forum, they're willing to let you withdraw but your account will get blocked.

Centralized that offer temporary no KYC will ended like Binance where now they will ask everyone KYC. Bybit is also offer temporary no KYC, but Binance and Bitmax aren't anymore.

Bisq is the only one exchange that offer zero KYC.
Any centralized platforms would really be ending up on the same path. They might be KYC-less or having none when they are just started but on the time that they become big and being recognized then this is where
government do really love to impose laws and regulation for these centralized platforms which it would really be ending up for these businesses to changed up their terms and conditions
which it isnt really that surprising and this is really that whats happening which things supposedly to be decentralized ends up on the opposite side of things but we know
on what these services do gives when it comes to convenience and this is why people do still make use and consider them out.

I don't know of any, but I can KYC for you using my docs, at a fee
That's not a good idea. Although there really are folks that are totally fine to do this as a service, they get paid with the use of the identifications. But it's never a good idea.

Aren't you worried if the person you've sold your identity will use it for the worst and some activities that might be illegal?

If the exchange and authorities track the person out, it will tend to be you as the suspect.

Not recommended. Exchanges will not only ask for user verification once (take Binance for example), they can be more strict than usual. Whoever takes this will forever depend on you and the fees to you will not be completed even once.

If you’re looking for exchanges to help you do that, there are a few that come highly recommended by the community at large. For bitcoin exchanges, I suggest checking out LocalBitcoins and Bitstamp. For Ethereum, check out Poloniex and Shapeshift.io. And for anything else, CoinMarketCap has a helpful list of all the major exchanges.

It seems to me that it is not necessary to use the exchange for that. You can just use a multi-currency wallet with an instant exchange feature. New Hitbtc wallet does this really well.
What are you talking about? Hitbtc is actually an exchange and the wallet is need to have verification process as stated on their page. The thing is this exchange is known has a problem and there's many users create accusations thread against this exchange.

There's other non custodial wallet that claim to not have any verification process, but actually it's wrong since when you installed the wallet you need to perform KYC or at least the wallet will monitor your activity since you're using their server.

This is an old article from Kucoin and it's dated and published last year. And I haven't found another new article that's related to account limits. So, this is what it says.

Dear KuCoin users,

Daily withdrawal limit has been adjusted to 1 BTC for accounts which do not complete identity verification(KYC).

Please complete identity verification(KYC) to increase your daily withdrawal limits to up to 200 BTC.

Note: Withdrawal limits refresh on a 24 hours rolling basis.

We apologize for any inconvenience this may cause. Thank you for your understanding and support!

The KuCoin Team

It's a centralized exchange but maybe that could add up to your choice since 1 btc withdrawal limit per day is still high unless you're that type of whale that do withdrawals 2-3 digits or more of bitcoin.

Do you have a problem submitting your official documents? If you prefer privacy and anonymity when using exchange platforms, the choice is yours. There are many exchange platforms that you can use without KYC, such as the ByBit platform. You can easily create an account on ByBit and trade currencies comfortably, and you can withdraw a maximum of 2 bitcoins per day, Also, on the PrimeXBT platform, you can trade on it for many trading pairs that are based on Bitcoin. The last exchange platform, CRYPTON EXCHANGE, is a good platform and will help you with instant deposits and withdrawals with no limits or restrictions, It still has a limited number of currencies, the most important of which are Bitcoin, USDT, XMR, and DAI.

FixedFloat has KYC. And even worse. They block client's money if a client refuses to pass KYC, they don't make a refund and keep coins to themselves. They just don't have KYC / AML policy on their website but they have KYC in fact.
I haven't experienced that by myself, but this is one of the reasons I recommend to only send small amounts at once.

Check their reviews: https://www.bestchange.ru/fixedfloat-exchanger.html. The reviews are in Russian but you can use Google Translate. They block money and Bestchange's admin closes disputes and makes them gray instead of red without getting resolved.
I know reviews on BestChange are unreliable, that's why I left Best_Change neutral feedback. I've now also added the same feedback to Best.Change (that's the user account that created BestChange's topic). If you create your topic in English, I'll read it.

Here is it, I finally translated it Smiley https://bitcointalksearch.org/topic/bestchange-keeps-scammer-exchangers-and-probably-collaborates-with-them-5424907

Alternatively if you aren't satisfied on those exchange then the best is to use P2P service from your local community ( Local thread or board) sometimes you could deal with them directly without incurring any kyc rather using an escrow from a reputable user here. From recent developments it's very important to apply caution while trading on any exchange and if there's no kyc then there would be some certain amount you could deposit inside which they might likely seek your identity otherwise would result in long stories. So using p2p to trade any currency you needed would be the best at this current situation. Note! not your key not your coin.

Sorry. I am looking to swap between crypto like BTC/LTC or ETH/BTC without KYC, and not to fiat.
For small amounts, I could recommend a few exchanges (FixedFloat, CoinPlaza, and more). For large amounts, I wouldn't dare trust any of them without splitting it up into many small transactions.

It's also in Russian but I'll translate it and post on the English forum in a few days, just hadn't time to translate it yet. I think Bestchange's admin shares profit with such scam exchangers because he keeps them and closes almost all disputes while clients don't receive any refunds.

I have used FixedFloat and CoinPlaza multiple times and both are great, they also have low fees compared to other more known exchanges AFAIK.

I am one of the users of the exchange
Code:
https://remitano.com/
so far I use it (make withdrawals and deposits) without requiring KYC,, all you need is to enter your email address and phone number, but if you want to increase the withdrawal limit to more than $100 / day, you must do KYC level 1, so on.

You can use the below link to read about no KYC exchanges, some like Kucoin are centralized, but you can read about the exchanges on the site, how decentralized they are or not, if totally decentralized like Bisq or centralized is reviewed on the site.

It was painful that Localcrypto announced that they were closing down after five years: After 5 years, LocalCryptos is saying goodbye

There is a topic you may want to visit: Current list of exchanges without KYC
But those are centralized exchanges.

My recommendation would be you consider using decentralized exchange, but that needs a bit more reading to understand what to do to not get scammed by other users.
I won't recommend a certain DEX, but a great list I can simply quote is:

Most decentralized: https://bisq.network/
More liquidity: https://localcryptos.com/
Also recommended: https://hodlhodl.com/
