I have now had coins in wallet for much longer than 5 days. Only one stake so far.

Staking with Pulse depends on difficulty, the minimum age is 5 days, if PoS difficulty is high you may need to make bigger blocks and/or wait longer period of time before your blocks start to stake.
This mechanism has been put in place to have a low inflation.
