Yes. The psu end will use the fixed 8 pin and the pci end will use the 6 pin the +2 will just hang.
75W per cable is rubbish. They can carry 320W at least with proper 18AWG wire, which most good PSUs use.
Each board has 1x 6 pin PCI-E connector, so 2 per miner.
You will be absolutely fine with this PSU.

Note: New Antminers come with 2xPCIe 6 pin connector ports, so no extenders or cable cutting is required.
May I please confirm that I will be able to power 2 x Feb batch antminers with 1 x Seasonic 1000w platinum PSU

For you at your present mining skill level I would go with BTCGuild just steer clear of P2Pool until you are further up the learning curve and from GHash.io (cex.io) because they are the biggest at present and should be denied a monopoly.
So basically I'd enter in my BTCGuild info into My Miner Configuration section as well?
If I have 2 pools setup, does my miner split it hashing equally amongst both of the pools?
No you have to register with BTCGuild first and then enter the right username. The Ant's by default operate in a failover mode so when pool 1 fails the ant starts sending shares to pool 2.
What I do is load balance between a number of pools by editing the antiminer's scripts, search around the Bitcoin forum for load-balance and you will find out how to do it but I strongly suggest that the next step for yourself is looking into overclocking, again have a search around the forum and you will find out how whilst your Ant is making you BTC

Yeah, I think blockchain.info wallets work, but I would really suggest installing bitcoin-qt as you can sign messages a lot easier (not sure if you can with blockchain.info) which you'll need to change settings at Eligius. I am running mainly Antminers at the moment but spread across a number of pools to reduce variance making my earnings are more consistent. It also helps when a pool has a failure as the hashing power then moves to the other pools.
What other pools can you recommend to me?
