Is staking btc address here is the same as the signed message that every forum account sellers must have? Confused.

Yes, to sign a message from the previous wallet and include into it the new BTC-address is the right way to change your staked address.
And you don't need to use the staked address for bitcoin trasaction, you can just use it for signing message. So the staked address doesn't expose any related info of yours.
