Yes, you can do it. At the Settings menu choose ‘Easy sign in’ to turn it off for 3 minutes

Yes, of course. You can create different wallets with different names in Bitcoin and Ethereum and all of them will have unique addresses and can be used separately.

You need to use it at least once. When you sign up, you need to enter the code from sms, that’s why your phone number should be available and be able to receive sms-codes.
