i'm using vertminer mining with 2 280x..mining reports ~700khs for the two cards but the pool only shows 20-30 khs
Are you getting any HW errors? Check the cgminer settings thread to see what other people are running with.

What sort of benefits are there to switching to the updated vertminer? I'm believe i'm still running the original modified miner when it kept the cgminer name. I'm getting 350Kh/s per 280x. Would it be worth while for the few minutes of downtime to test and switch over?

Already did. Still doesn't work. The modded CGminer and vertminer is to blame. Spent the last hour trying to fix it but no go. Finally managed to fix it by reverting to CGminer 3.7.2 and now I'm happily mining FOX while I go to sleep for the rest of the night.
If someone can tell me how they got Vertcoin mining it'd be great. It didn't work for me. Also, there's a new miner program called SGminer. It's basically CGMiner but updated and less bugs.

I'm having a problem with my wallet
was working fine for the last 2-3 days (updated to newest wallet in OP)

Facing a problem here. CGWatcher is reporting over 500Mh/s mining Vertcoin while generating 0 share acceptance from the pool. Everything is getting rejected. None of my mining settings has changed as I can still mine DOGE and whatever. Everything is getting rejected.
Are you using the Vertcoin specific cgminer? Also, the same settings you use for Doge and other scrypt coins might not work for mining vertcoin.

Another speed demon of an exchange. But Vert is worth the chase. I can't believe this coin isn't already on Cryptsy or BTER. BTCe trolls even baiting the banhammer to talk about it.
