I think that such thing as an stable altcoin doesn't exists, what you should be aiming for is the one that could give you the most of the profits on the long term or short term if you prefer that one, I'd recommend NEO, EOS and cardano and also bitcoin which isn't considered an altcoin but is a good addition to any portfolio. 
I think that the most stable altcoin is difficult to determine if the market is too volatile and all prices depend in one way or another on the price of bitcoin!
in my opinion, you just see the top 10 coin in coinmarketcap, it can already explain from the best coin from different side
I prefer to trade TRON and Cardano. I think that these coins are quite stable for investment and I am sure that their popularity will only grow.
in my opinion, the current stable coins are ETH, doge and BCH. because these three coins are very stable in the crypto market and the volume is quite large in some crypto markets.

I think that the most stable crypto currency for today is the etherium. Other coins with steep technology have not yet grown stronger. 
Most coins that have matured for a while are good choices. I like coins such as verge Tron and Ethereum all of these coins have been around a while and have a strong community backing them!!!
