My main bugbear is account freezing. Places like Bitstamp will shut you down for crossing some line they haven't told you about even when you're fully verified.
Either you're verified or you're not. If you're going to spring more on me then you can piss right off.

What I do not like about some exchange is the manipulation of prices and trading activities in it. But of course, exchanges are important when it comes to cryptocurrencies, some really need to improve the processing time and the transaction fees must be lesser.

I think it's the reputation about crypto's are more important on the matter exchanges improve by time but people's way if thinking won't if they won't receive the truth about crypto's that could benefit us either way. Exchanges have many different functions and ways to befriend the users by having an easy explaination on their site. The reputation as we know on crypto's is bad though not too bad but it takes after the unrelated scams to sway the customers away. What do you not like about crypto exchanges? Do you mean exchanges in general or some particular? If talking about all exchanges in general, I would exclude trading fees. As for a particular platform - I use cex and woul love they expand the list of alts. Or at least add ltc and neo.
Some of the architects were going to launch an exchange, they have all the tech ready to run with pre-built charting pulling data from all other exchanges at 1second intervals, Coinbase, GDAX, with 10x leverage futures, but then they found out how much effort you need to put in and how little return you get dealing with retail traders, even with a $5k minimum deposit so just decided why bother, on chart trading using the tech, very nice.

A lot of them are full of crap. Really messy interfaces, graphs everywhere and no reasonable set up. Needs to be simple with info that everyone can see really cleanly. Potentially with an option to expand to a higher user interface if wanted.
If you like it simple and easy with no messy graphs, use coinbase. It's probably the most newbie friendly (and at the same time unfriendly to pro traders) exchange out there.
I think most of the points were already made. Exchangest lack proper security, that's their greatest flaw. I'd also like them to have less KYC requirements.

- Ugly UI
I have no problem with ugly websites as sometimes I like the old-fashioned websites like in 1990 but the "night mode" sometimes used as the main template really hurts the eyes
- Not so secure
It's maybe the most important thing when it's about an exchange if it can't protect its users while would they want to use the service.
- Low support reply
Support needs to be a priority too, you deal with the money of people and they can be frustrated when it's about money. They don't contact the support to get the weather for tomorrow.
- Not a lot of coins listed
for example Site 1 to trade coin A, site 2 to trade coin B site 3 to trade coin C and so. People prefer to use only 1 exchange having all their favorites coin listed
- Apply KYC
Why asking for KYC documents if the user is not dealing with a bank transfer (in or out)

Too much terms about verification process is the one that really annoys me. I understand that they are complying with the government terms but sometimes it's way too much e.g you submit documents but still failed although the output is clear and easy to view.
And another one of course, like anyone's concern, the way they handle their support. From better at first to worst and worst and worst.
For now, that's my concern.

either heavily regulated (so that they are more trusted) centralized exchanges.
or easily used with a lot more user friendly options decentralized exchanges so we eliminate the middle man and the trust issues all at once.
so far we have half of each of these! centralized exchanges that are somewhat regulated but not trusted yet and decentralized exchanges which are not easy to use and don't have the same options.
