Because Ethereum blockchain is ideal blockchain for mass adoption and easy to deal with. Even Microsoft has started building their Azure platform on Ethereum blockchain and IBM is working on it as well. Ethereum blockchain hold way too much potential to turn around things in way better and faster.

because ethereum has a smart contracts that can be use to create a token for their ICO, and by the use of ethereum blockchain. it is more convenience to them to use ERC-20 token if they dont have a wallet platform yet, and it soon to be followed. so most of the ICO are base in ethereum thats why, i believe that this basing of all ICO in ethereum platform can be the reason of the huge pump in the future of ethereum. because of the demand and the usage of it world wide. this is the advantage of ethereum on all coins platform exist.
I think there are two reasons:
1) Ethereum has a very powerful dev team and community, the platform is very reliable and easy to use.
2) Ethereum are widely accepted by the investor to buy ico tokens, I think most exchanges has eth/usdt pair, that means the investor can easily to buy ico tokens by eth.

Currently, there is information Coinbase announces plans to support the token ERC20. Thus, the future of ERC 20 is still very strong when supported by Coinbase, many Altcoin ERC20 will be list on coinbase.
I thought that smart contracts will be near to its death soon since Vitalik Buterin is doing another project and that can take over smart contracts but with the support of coinbase to ERC20 tokens, this will make ethereum based tokens stronger. 
I think it's smart contracts is reason of so popularity in ICO platform choosing Ethereum. Nobody really wants to develop their own blockchain like it did developers of ETH
