Because I think many client user liked it because it allows the clients interact the token and blockchain in a fast transaction and also you can use the ethereum platform in trading or sending tokens that is why many used it.
At present most ICO are based on Ethereum Platform because the speed of Ethereum blockchain is good enough. Creation and Listing of ERC20 coin/token is easy and cheaper. A number of wallet and trading platform are available for Ethereum based coins.
It is the only platform at the moment that is so established and that also offers the abilities required by these new projects. Other projects do not live up to the task yet.
