I brought 3 server nodes (non-masternode) online last night in the EU, US, Australia, just to help out with bandwidth and propagation. I will bring another 10 or so online today to help out while we get through this initial period.

I believe staking=1 actually is the default value, so you don't need to add that. At least my wallet is staking without it. You would only need to use that if you don't want to stake for some reason (then you would need to add staking=0).

Also, I think its important to realize that coin maturity doesn't come with time, but with blocks, or 'confirmations'.
So coins don't need to be one week old, but rather 5040 blocks. Basically, the slow moving blockchain has also slowed down the maturing of coins itself. The good news is that with each new block, more and more coins are reaching maturity right now and they will become available for staking.

At least this is what I think, please correct me if I'm wrong.

Due to Network issues at the very beginning COLX Blocks are still moving very slowly. There are simply not enough COLX Matured Coins in the Network.
