Minting occurs when you have your wallet open.  If you have encrypted your wallet, you will need to unlock it for the minting process.  Open the RPC Console in the Debug Window and type:

This will unlock the wallet for minting only.

Mining
You can solo mine from within the wallet using your computer, by opening the RPC Console in the Debug Window and typing:

The cube’s built in miner is a basic getwork miner.  You can point it at Version directly by:

And then putting your ip address and rpc username/password and port into the setup web page.  However, note that the ASIC runs way faster than the daemon can keep up.  It will not mine at anywhere near a fast rate.
You can also run BFGMiner with the –http-port option to use it as a proxy.  You will need the bfgminer build with libmicrohttpd.  As far as I am aware there aren’t Windows binaries available with this built in.  It is a lot easier to build this on Ubuntu or Linux Mint yourself.
For solo mining with the cube (and other ASICs), you really need to setup a local stratum proxy.  This is technically involved, and it is a lot easier to mine against one of the existing pools.  However, if you want to try it, this is a good thread with a walkthrough:

To mine against one of the pools with the AntMiner U-1 USB, you just use cgminer and point it at the pool in the usual way.
To mine against a stratum pool with the BlockErupter Cube, you need to use the stratum mining proxy.  I followed this guide:

version.conf:
The configuration file name is version.conf.  This goes in ~/.version/version.conf on Linux or in the Users\yourusername\AppData\Roaming\Version\version.conf on Windows.
