Diff is not readjusting 
Maybe small amount of miners? Or it readjusting after N blocks or etc.
Just mined some, so it seems to be working.

I give up.
I only have one server. It's the only one clients are connecting to. I need a few IP's to be added to the list and the problem is then solved.
Open client -> Debug -> Open Console -> Type in the below:
