How as an individual can I know if the Earth is a sphere or a flat disc? What experiment can I do that doesn't involve trusting information from a 3rd party that would prove what the geometry really is?

If F = Gm1m2/r2 , the universal equation for gravity, with said equation incorporated in the building of all bridges, how do them bridges remain standing if gravity doesn't exist given the impossibility of devising an equation in the first place?
