It makes sense considering the power of the water stream depended on pressure one applied on the button, it sounds like something difficult to implement on a computer game since pressure sensors are not a thing on most laptops/pcs.

Indeed!! I can remember it perfectly, it was not too funny, but in the case you hadn't something better it made the deal
The idea about adding the risk of unhooking the ones that were previously hooked would be interesting to see at work: greediness vs. risk avoidance, it adds some exciting decision making to the typical psychomotor skills + chance mechanisms.
I did not like to play it in the beginning but once I learnt how to play it it became entertaining.
in case of becoming a casino game it would be ideal if those rings unhooked by the played became a monetary punishment for them, to encourage the player not to unhook them, or they could simply make it a time game, the more rings the players manages to hook in the least time, better the reward.
But I am afraid it would become a skill game rather than a gambling one, dont you think?
