Maybe BTC AND ETH pairs might stop trading on that day but maybe things with Bitcoin will pan out before August 1st so then things might run as normal.
it might be possible but only intended for btc<->eth trading, as many traders would be in the panic mode as what they have said traditionally that august is a bad month for stock market and other stock trading as what they are referring to as "a ghost month". other than eth<->altcoins trading will go on. but for a safer side some might stop trading for a while.
Will ETH also stop trading this JULY 31st to August 1 UTC in exchanger sites? and will USDT be affected in this BTC update?

No problem with ETH. ETH would may need a correction like BTC as it rise too fast and it has many ICO as startup will need that ETH from ICO.
I am also curios about ETH on 1 Aug, so far I HODL.

I think not, hardfork issue only experienced bitcoin and ETH no effect, bitcoin and ETH price back up, this is a good time to buy as much as possible.
I do not think that Ethereum will stop trading at August 1. It is one of the main altcoins that people have invested in in their panic stricken actions. They would want to sell at the last second and buy up a the earliest time possible.
AS for USDT, (I think) it should only be affected if Bitcoin splits. Other than that, it should be fine.
