I think everyone will do that. Even those who are very vocal claiming that they will never eat human meat. If you go without food for a few weeks, then you will eat just about anything. Nothing is more important than staying alive.
I think people's morality is what controls their actions, their will determines what they should do. A simple example from my histroy:
The Meccan boycott of the Hashemites was a public boycott against the clan of Banu Hashim / Hashmi Family, declared in 617 by the leaders of Banu Makhzum and Banu Abd-Shams.
It became a source of great troubles for the Muslims. They were forced to do their second migration to an area called Shib Abi Talib or Shib Abi Hashim where they suffered hunger. The boycott was ended in 619, the Year of Sorrow.
These days were very hard with them and very often they had to feed on the leaves TALH or plantain"
They starved for two years not a few weeks, they started to sniff dust and chew tree leaves other than thinking of eating each other.
But of course I'm not denying what you said. Everything has a limit and human's will can be broken. Another example from my history as well: during Almustansir Billah's rule of Egypt, happened a famine after 7 years of Nile's dry out when people started eating dogs and cats meat then they turned towards humans, started using hooks to hunt passengers on the streets of districts and the population drastically decreased.
