I hit exch.cx on Tor Browser, get redirected to - hszyoqwrcp7cxlxnqmovp6vjvmnwj33g4wviuxqzq47emieaxjaperyd.onion - and the connection times out. Is there a problem?
For me it took a long time to load but there was no other issue.
You most likely visited the "http" version of the website which still loads normally, the "Https" version is not available at the moment for some reason. Perhaps it's temporary. I wouldn't use the "Http" version for any transaction for now until it's rectified.

I did not allude to anything on the contrary. I am glad they are open to the idea of adding more options to their website. Reputation on any website is extremely difficult to come by and from is apparent within the forum is that eXch have excellent reviews and feedback therefore whether they chose to expand or stay with the crypto they have, they will continue to attract new customers as well as retain existing ones.

It cannot be said that they are not thinking in that direction

I had the same issue with onion website time out, than I changed identity with my Tor browser and I received some error message warning me about some risks, certificate issues, etc.
I accepted all ''risks'' and website loaded perfectly fine after that.

I visited the website today and noticed they have not added any other new crypto to their list. I mentioned this before in a post some time ago and understood the reasons why the options were not expanding. Though it is not detrimental in an capacity to not increase the number of crypto available to exchange, it would certainly bring a bigger client base to their website. If eXch were offering those services at a compromise to their ethics or security, nobody would expect them to do it but if those two principles are not affected maybe they can consider it.
They already talked about their plans related to the implementation of new coins and tokens
Some of their statements:

Most likely not and specially if the purpose of supporting the whole new network is only because of 1 stablecoin (USDT). USDC is quitting Tron by February 2025, DAI is Ethereum only, other stablecoins are either scam or potential scam. I have a support ticket open with them which I've been waiting almost two weeks on, and I really need to expedite the process and get the case closed.

They are not responding to forum PMs, so I am hoping there is a way to reach them using an out-of-band channel like email or something.

ETH node is working again on eXch, but it seems that they don't recommend its use either.
Here is the last statement about the whole thing:

I was also wondering, seeing the success of these raffles, if eXch has something in mind about coming up with some other series of raffles, maybe with other kind of collectibles, after these 20 raffles will end? I know it's a lot of time left until the 20th raffle will be held, but maybe if eXch has something in mind about continuing with such raffles, maybe some constructive ideas may come up in this amount of time.

 I support this idea, I think it's a great way to promote a good service while offering activity and great prizes to the community.

Also, perhaps if eXch has the time to do it in the future, I think an Ask Me Anything topic with him could be very interesting. He always seem ok with being transparent and open to discussion, and it could be a great opportunity for us to learn nice stuff.

Though they have not been mentioned as much they should have been in this thread or in any part of the forum, these are very without a doubt extremely generous donations and will definitely be appreciated by the recipients. The one that stands out the most is Simple X because of the reviews it is receiving. It is being used by more people as it gains popularity as an alternative to (primarily) Whatsapp and Signal.

Nothing unusual in my opinion, it only seems to be online when it needs to communicate urgent/important info
They already said earlier that they don't have a specific person for communication and support with users, but one of the team members does it. In the last few days, they had some difficulties with the operation of the Ethereum node, I wouldn't be surprised if they are currently dedicated to solving that.

If they change their mind about adding support for new blockchains and their tokens, I think it makes the most sense to add those with the most trading volume. If we consider the two most popular networks for stablecoins, then those are Ethereum and Tron. I wished they had added Tron's USDT in the past, but ever since Ethereum's last network upgrade, it doesn't bother me anymore. The fees on the main chain have gone down to rival and even be cheaper than those on Tron.

I have not been a fan of Ethereum for a long time, so I am not particularly disappointed and if it does not work, it is certainly better for the business itself if it is present. Judging by the displayed 24h trade volume on exch, Eth is the most popular after Bitcoin.

That's too bad. I hope they can fix that. eXch is one of my go-to no KYC exchanges when I am trading bitcoin for stablecoins. I am sure that I am not the only one because the stablecoin reserves deplete quickly when bitcoin is up. I never experienced delays in receiving my coins in the past.
