What does Qd1 stop? After he takes our rook on d3 we will have traded 1 pair of rooks and lost our d3 pawn for nothing. We will probably lose more material shortly after that due to our weak pawns and position of his pieces.

i don't like how our bishop is immobile

I think this is the best of the worst choices. I certainly don't see a better move and it's long past time those rooks get into action.

I can't follow what you're saying at all. We play e5 after Black recaptures, forking the knight and recapturing piece. There is only one way for Black to save both pieces, and it significantly worsens his position.
Right, that is why I'm saying Bf4 is not a good move. Although I see no reason why we would ever move Bxd6 in response to Bd6

Nf4 looks okay to me to as an alternative way to defend d3. All 3 moves above actually seem like decent options. I still slightly prefer Bf4
