For me, it's easier to quit when I'm winning, especially if I've reached the specific quota I've set for the day. I'll just come back tomorrow. But when I'm losing, even if I've set a quota for losses, I tend to make a deposit right after draining my current bankroll, trying to win it back and reach my target amount. Sometimes, I can control myself and avoid making a deposit again, but most of the time, I can't.

Honestly it's much harder to quit while you are winning unless you have an exit plan.  When you are winning you usually don't stop because you think "it's my day today" and the winning will continue.  When you are losing especially for me, it becomes less fun and I gamble for entertainment.  Also if you lose and have no more money to gamble with it's easy to stop, because you have to lol.
You are right because sincerely speaking most people do not care about quitting while winning except they are winning, but it's also important to set limits for one self because if you don't set maximum winning and maximum lose you wouldn't know when you go above your target even though you are losing you would find it very hard to stop because you would see that quitting is minus to your self therefore you must look for alternative to make sure to recover what you had lost.

i am not one to keep myself bleeding down to the last cent if i notice my money decreasing and not getting any profit then i would take that as a sign to stop and take my money to put into better things that could potentially give me profit instead
That's how it should be. If you're in profit, be contented so just quit. However, not all gamblers are able to do this because of their greed to gain more. The reason why it's much easier to stop once your bankroll is slowly decreasing. Because that's the time you'll feel a regret for losing your money in gambling instead of spending it into other things. Thus, it is likely you will save what's left before it's too late.
This is why it is easy to lose it all to the casino due to one not having the strong motive of quitting the game when losing or winning for those reasons which you mentioned above.
