Will there be a new coin after changing to cryptonight v7?
Nothing will happen. This is not a contentious HF but a network upgrade the result of which is that only those running the new software will be on the network. The coins themselves don't change in anyway. Monero forks every 6 months so it has gone through this process several times already without any problems. Hard forks are done because Monero is still in very active development. Please note that it is an entirely different code base than btc. Most alts are just btc clones. Monero is a leader.

I thought that a hardfork automatically means a brand new coin as well (and soft forks for smaller changes without a new currency).
A hard fork (code) does not necessarily mean a fork (chain) will occur it means that if the clients are not updated that they will not move to the new chain and if there are enough that stay on the old chain then a actual hard fork will occur creating 2 chains. The syntax is ambiguous and should be refereed to as a scheduled update as hard fork has become synonymous with a chain split. Monero has had schedules Hf's it's entire existence as that is when updates and bug fixes are applied. I thought that was supposed to stop though after the beta was over but meh, I can't remember and probably the beta tag should not be removed until all the pre scheduled updates were incorporated, I.E. Multi-sig.
You don't have to wait for a hard fork for bug fixes as they can and have been done in point releases. I don't remember any bugs being consensus related and therefore having to be dealt with in a hardfork

This is true, you don't have to wait for "Critical" bug fixes to be applied at a scheduled update time but non-critical ones are always added into the point releases. AFA BTC still in Beta, I can see that. Lol
