Hey looking for advice, i've setted up 8 125k blocks, is it good?

Is a higher difficulty better for the Bitbean's network and value?

Yes cause more people are staking which means less coins for sale! Supply and Demand Wink
Erm, not really. If people stake, inflation rises, and price goes down.
And there are so many people with coins that inevitably there's gonna be someone selling.

I'm doing my part by keeping every bitbean that I can get my hands on every week.

"Bean Cash..More Than Digital Cash!"
what is the PoS rate?

I do not see it in the OP.

Thanks
There's no rate. You get 1000 beans per block. Apart from that normal rules of staking apply (stake weight and age)

On staking, is there a min or max size for a block to stake?

Minimum to compete for stakes is 1,000 Bitbeans in a block. There is no maximum.

BitBean has a static reward of 1,000 virtual beans per stake. It is unlike most PoS coins, there is no percentage basis for rewards as it is more closely akin to PoW.

Is there someone who is willing to explain why I should invest in Bitbean?  What makes this cryptocurrency valuable?

We will be Bitcoin's replacement.

I'm searching for coins to start staking with, and this seems promising. I'll give it a shot for sure!
But i didn't entirely get this, apart from the fact that there is no interest the other normal rules of staking apply? Like the more coins you got the more chance you hit a block?

Correct
