How long does it normally take for the wallet to start up? Mine has been "loading" for over 15 minutes.

It is same with all equihash wallets. You need to sync the blockhain. Once you do this every time it only gets the remaining - missing parts from the blockhain.

Far as I know, Monero is the only one truly anonymous, Zcash is not. So will the Zero Knowledge do its work perfectly as you said?

As long as you send from Z-address to a Z-address noone except you and the recipient can know about this transaction
