How can the players be mining right now
Well it is called MINEcraft, so mining is what they do all night long I guess...
Wallet mining I guess, what else can be going on?
There is no need to wallet mine this it is a scrypt coin.

Stats page? You're going to need to be a bit more specific.
Something like these:

Could you please answer the question? This is the most important info for miners.
All of those stats can be acquired in the wallet by opening the debug window and typing "getinfo" and "getmininginfo".

Have any game servers been implemented yet with the coin?
Someone over on the Minecraft Forums says they have it implemented on their server. [link] I have no way of confirming this however.
blindfolded is working with a few server admins to get it setup and integrated in their existing economies, I have no idea what the current status on that is.
