Of course ships don't disappear over the horizon, or under it, for that matter. Like the term "water level," people simply use the words, "over the horizon" to explain what they see, rather than the whole physics of what is really happening.
The appearance is that ships do disappear over the horizon if they travel far enough away from the person viewing them.

But you will never see an airplane in any "space" footage from the ISS or any other "space craft".

Every plane must have crashed killing everyone on board because they couldn't have been anywhere near the correct destination point using the wrong earth model to navigate the course...
