Seasons greetings Fellow Naija board members. It's been a great year with great improvements on our board so far. The year is finally coming to an end with Christmas just around the corner.

Without further Ado I'll like to introduce this year's contest!!!
Well it's always about art for most contests but this time I'm taking it to another level. This year's contest features all varieties of Nigerian dishes especially our most recognised and dreaded

Seasons greetings to you @mia Chloe!! merry Xmass and a prosperous new year in advance. Indeed the second round of the contents is here again as we did last year.  I thought you almost forgot to host it again, I was even thinking about it before I saw this thread and am glad about it . I respect you for the effort you are putting to make the Naigeria local board an active one, especially during festive period like this. We are delighted to participate in the contest  to make it a success. Once again happy Xmas to all Nigerians local board members.

It's simple all you have to do is Prepare any dish for this Christmas and new year celebration and share here. Make sure to give at least 3 photos of the cooking process to verify authenticity. All african and Nigerian dishes are allowed.
I just wish the  foods will be tested by the judges.  How sweet and nice some food may look but may not be tasty as they look or appear and may even be the winner. Or vise versa  hahaha .

Nice initiative OP, I can finally put my jollof rice cooking skills to work. I will be participating and shipping in 50 merits to the merit pool.

Initially I thought I could make this myself but I checked out the recipe in the link below found on google and I don't think I can get some of the ingredients like Nigerian stock or even thyme, and even if I could it sounds complex specially since I only dabbed into cooking and I suck at anything that needs mixing. Cooking rice and stew separately and serving them that way is fine Cheesy

I checked the link and the steps are way too outdated and complicated for a beginner, preparing jollof rice with that method requires a non-stick pot and a foil so the bottom and the top get dried evenly without getting burnt at the bottom. You can use these simple steps.

To be frank, this idea make sense and from the looks, e don begin dey showcase our LB to the general platform and reputable members here. Contest like this go help us show our strength in various capacities as good cook so that we go dey flow along make nobody feel left behind. This na opportunity to showcase Nigeria and Africa delicacies to the world.

Already reputable members wey dey this platform don begin talk about their experiences with African delicious food which I so much cherish. I believe say this development now don put our LB in limelight for this platform.

Mia Chloe weldone for this good contest, you don really do well to bring up something like this here and this don really attract the attention of reputable members of the platform to our local board.

This one na opportunity for me to make reservations o.

It's a very nice idea to host this competition mostly as we have other kinds of competitions ongoing on this forum during this yuletide season as well.
There's been art contest, pizza day contest, pumpkin carving contest and now we have Naija African food contest.
Great initiative indeed and this shows our dedication to the forum and to our country. Naija no dey carry last o! More power to your elbows!

Bitcointalk needs more food related topics, contests or otherwise. It is just fantastic to learn about all these dishes. I'll chip in for some merits to the winners as well.

Thanks for your support
Really nice Contest, dear Mia Chloe.
I'll chip in some Merit for the winners:

Nice pick pooya87 .
Thyme gives the jollof a natural flavour and scent. Most times though you can add it directly to the rice most people often add it via the parboiled protein (either fish, beef , turkey , chicken etc...) the more familiar you are with the dish the more get to know a couple of spices. Looking forward to your dish.

So I thought I should just share a tiny thought I had about lack of Tahdig (tah means bottom, dig means pan). Tahdig is the crispy rice (or anything you put) at the bottom of the pan. But it is an art to get it just right.
For example in this recipe, step 6 is lacking that Tahdig step, and it is also using the wrong pan for it; non-stick pans work best to get the best Tahdig. The same site has some info on that:
https://www.seriouseats.com/tahdig-persian-crunchy-rice-7187445
I didn't like all the pictures there so here is a google search link with some better looking pictures:
https://www.google.com/search?q=%D8%AA%D9%87+%D8%AF%DB%8C%DA%AF+%D9%84%D9%88%D8%A8%DB%8C%D8%A7+%D9%BE%D9%84%D9%88&udm=2

I used لوبیا پلو (means green-bean rice) as the search query because it also uses tomato[paste] so it looks similar to the dish in OP, visually speaking.

I suggest giving it a try and enjoy the result... Cool

Okay. This is a nice initiative.
I don't think I have come across a contest like this but I'm quite curious what's the criteria for judgement?
Like how would winners be picked?
I think you participated in the last contest last year though the theme was an art contest. Anyways I have two proposals in mind for the voting to ensure transparency. Either way the best will be contemplated on and used.

I will be doing a beef stew. With tomatoes carrots celery beef onions.
Since I am a diabetic I will serve it on various beds of
two for non diabetic carbs are higher
pasta
rice
two for diabetic carbs are lower.
riced cauliflower
diced squash.
Nice one phil here in Nigeria we usually call it white rice and stew and ("some of us dey even call am stew rice ")

Wow, this is a good one. Last year I was not part of the Xmas art contest, and this year I might try to see what I can come up with this time. Maybe a nice locally made dish—the festive period will give a lot of time and chance to prepare that.

It is good to see this kind of thread.

This year's contest features all varieties of Nigerian dishes especially our most recognised and dreaded THE NIGERIAN JELLOF   Cheesy  Grin .
You mean Jollof Rice? I like to specifically call it Nigerian Jollof. White people that even taste it are not disappointed at all.

I take Dibs on Pounded and Egusi.  Grin
Let us not make mistake in the food we are mentioning. You mean Pounded Yam and Egusi soap. It's really a nice food.

This is a great initiative that will help Naija girls and boys show their cooking skills in the forum. The first contest I witnessed since I joined the forum was about artwork, which I am not good at, but I put in my best effort to come up with an art piece, but it was not good enough to earn me a winning spot in your last year's contest. But I am happy that this year's contest is about cooking because I am very good at it, and I hope to be among the five winners in this year's contest. I am looking forward to this contest.

Wow I'm quite surprised about this
Never tested Ghanaian dish either
Look forward to the dish you making.
You still not gonna taste this one lol…, only seeing, feasting your eyes.
So Basically the best procedure and finished product picture wins.
Unfortunately we can't tell how the dishes would taste
But I'm a person that judge their food by the looks and smell( won't be possible here)
Best procedures? There's really no best procedure in making a dish
There are unique ways in cooking that can lead to similar or dissimilar result
That's why I'm curious how it would be judged not excluding the fact that there are variety of dishes in Nigeria
Especially from the east, so judging might be hard except we focusing on aethestics which I believe is too narrow.

Well I believe the organizer already has a plan.

I'm kind of a foodie so there's no way I can sit around not meriting pretty food.
Since the competition is quite far I can save before then.

I like to cook, I never cooked a lot of African food. My bro-in-law has a Ghana woman to help him with dementia. She cooks a lot of nice African food.

I will talk to her and ask her for a dish to cook.

Thank you for bringing this this post to our notice and I would be happy to participate on this contest as a Bitcointalker. Since it's already a festive season, we will all be preparing our favorite dishes. And I think this thread will make us know and learn some African dishes also, and to be sincere, I do not know much African foods and since the ingredients and the food will be posted in this thread, other participants could see and learn how to prepare there's. And i would also be happy to see some interesting results and contributions to this forum and this thread.

Well I have hosted this type of contest since I joined the forum even before this board had a moderator. See :
https://bitcointalksearch.org/topic/naija-board-2023-art-contest-24th-dec-31st-5479089
Awesome mate I really applaud you for this, it's really a selfless act, but still try reaching out to the moderator so your message would be pinned and this would be the official Contest post we would have here in the board, once again great job and more success.
