It's a very nice idea to host this competition mostly as we have other kinds of competitions ongoing on this forum during this yuletide season as well.
There's been art contest, pizza day contest, pumpkin carving contest and now we have Naija African food contest.
Great initiative indeed and this shows our dedication to the forum and to our country. Naija no dey carry last o! More power to your elbows!

Initially I thought I could make this myself but I checked out the recipe in the link below found on google and I don't think I can get some of the ingredients like Nigerian stock or even thyme, and even if I could it sounds complex specially since I only dabbed into cooking and I suck at anything that needs mixing. Cooking rice and stew separately and serving them that way is fine Cheesy

Thyme gives the jollof a natural flavour and scent. Most times though you can add it directly to the rice most people often add it via the parboiled protein (either fish, beef , turkey , chicken etc...) the more familiar you are with the dish the more get to know a couple of spices. Looking forward to your dish.

So I thought I should just share a tiny thought I had about lack of Tahdig (tah means bottom, dig means pan). Tahdig is the crispy rice (or anything you put) at the bottom of the pan. But it is an art to get it just right.
For example in this recipe, step 6 is lacking that Tahdig step, and it is also using the wrong pan for it; non-stick pans work best to get the best Tahdig. The same site has some info on that:

I used لوبیا پلو (means green-bean rice) as the search query because it also uses tomato[paste] so it looks similar to the dish in OP, visually speaking.

Like how would winners be picked?
I think you participated in the last contest last year though the theme was an art contest. Anyways I have two proposals in mind for the voting to ensure transparency. Either way the best will be contemplated on and used.

I will be doing a beef stew. With tomatoes carrots celery beef onions.
Since I am a diabetic I will serve it on various beds of
two for non diabetic carbs are higher
pasta
rice
two for diabetic carbs are lower.

diced squash.

Wow, this is a good one. Last year I was not part of the Xmas art contest, and this year I might try to see what I can come up with this time. Maybe a nice locally made dish—the festive period will give a lot of time and chance to prepare that.

The first contest I witnessed since I joined the forum was about artwork, which I am not good at, but I put in my best effort to come up with an art piece, but it was not good enough to earn me a winning spot in your last year's contest. But I am happy that this year's contest is about cooking because I am very good at it, and I hope to be among the five winners in this year's contest. I am looking forward to this contest.

Unfortunately we can't tell how the dishes would taste
But I'm a person that judge their food by the looks and smell( won't be possible here)
Best procedures? There's really no best procedure in making a dish
There are unique ways in cooking that can lead to similar or dissimilar result
That's why I'm curious how it would be judged not excluding the fact that there are variety of dishes in Nigeria
Especially from the east, so judging might be hard except we focusing on aethestics which I believe is too narrow.

Thank you for bringing this this post to our notice and I would be happy to participate on this contest as a Bitcointalker. Since it's already a festive season, we will all be preparing our favorite dishes. And I think this thread will make us know and learn some African dishes also, and to be sincere, I do not know much African foods and since the ingredients and the food will be posted in this thread, other participants could see and learn how to prepare there's. And i would also be happy to see some interesting results and contributions to this forum and this thread.

Anyway, I am not a merits source to contribute to the donation and rewards to the winners, anyway if there's any huge dump I can actually send out to the winners, but if there is no one who is willing to do that then I will have to support with at least 24,000 Naira equivalent to 15$ in usdt to the first winner in support of the merits required.

Good idea OP. But pls i would like to ask is this the board contest or your contest. It's great to see member running contest like this for the growth of all and I encourage it but it would be right to state it. I don't know if it's your contest but if it's a general then it should be recognised by the moderator after he has cleared it if not we will be have other members spamming with contest.

Also it won't be easy verify if the dish is actually from the contestants that posted it, regardless the idea of a contest where members here can have fun and earn while participating is encouraged but let it be organised in a structured manner.
