    MY XMAS JOLLOF RICE

Ingredients to cook Nigeria jollof rice.
Fresh tomatoes
Fresh pepper
Onions
Groundnut oil
Ginger
Garlic
Thyme
Curry
Maggi cube
Steamed meat water.
Salt
Tomatoes paste

STEPS TO COOK DELICIOUS AND YUMMY JOLLOF RICE.

- Parboil your rice and wash it thoroughly, three times precisely.

- You blend your pepper, tomatoes, onion, garlic and ginger together.

- Put your pot on the fire and heat it for 30 seconds, and pour your vegetable oil into the pot, allow it to heat for at least three minutes.

- Put your slice onions into the heated Groundnut oil and stir very well, add the blended ingredients. Stir it very well and allow leave it for 15 minutes and then add your tomatoes paste, all your spices and seasons.

- Pour in your steamed meat water, add little quantity of water. Put in your parboiled rice into the pot, and put the same water level to that of the rice and allow it to cook for 10-15 minutes. Food is ready.

INGREDIENTS AND MY FRIED RICE COOKING PROCEDURE.
6 cups of rice
Salt
Maggi
Curry powder
Thyme powder
Fresh pepper
Spring onions
Red kidney beans
Garlic and Ginger
Green Beans
Grean peas
Chicken
Vegetable oil
Green pepper
Water
Onions
Carrot
Stock water..

Wash your chicken  thoroughly. After washing your chicken, Add your chicken into a clean pot and add your seasonings like maggi, curry, thyme, garlic, Ginger and salt, add all to your taste. Next you place your pot where your chicken is on the fire and allow to simmer a bit under low heat, don’t add water to it, let it simmer for about 20mins the reason for this is to allow your chicken absorb the ingredients and flavors embedded in it already. Then after 10-20mins, you can add in water because we need stock water when cooking our fried rice. Let the chicken cook for about 10-20 mins your preference though,then you separate your chicken from the stock water. Sock the kidney beans before cooking the rice. After that, you wash your frying pan put the frying pan on the fire for the wash to dry off then you add in your vegetable oil and heat it up then add in your chicken and fry it the way you want it to be. some people would love to add in onions to give it this extra flavor before going in with the Chicken, I also did that too. So once your chicken is fried to your satisfaction, set aside.

Now to the preparation of our fried rice

All your veggies, wash thoroughly and dice them into moderate or perfect sizes,I mean your carrot, spring onions, green pepper, green peas then set it aside.
Parboil your rice, once parboiled put it into a sieve for the wash to dry off. Then you wash the rice thoroughly. Then your stock water drill in through a sieve so that the rudiments from the chicken is drilled out, some people might prefer to use their stock water with the rudiments in it. So once you’ve done that put the stock water into your pot that you will be using for cooking on the fire then add in your rice that has been parboiled into the stock water. After that add in your salt, seasoning cubes (maggi), then add in your curry and fried rice species then some ginger and garlic. If the stock water wouldn't be enough to cook the rice you can add little water that can cook the rice and add your kidney beans so it cooks also and become soft. Then you let it cook. In a frying pan,add in vegetable oil, add in some diced onions,let it fry a bit then go in with your veggies bit by bit then you add in your curry, salt and seasoning cubes. It should fry and cook a bit,
Then once your rice is all cooked and done you add in all your stir fried veggies then your mix with a turner from top to bottom till it’s goes all round. Then you let it heat up a little bit more on low heat.
So once that’s all done you bring the pot down and off the fire and dish it. merry Christmas to all you.

It takes a couple of tries to get things correctly. There are a couple of tricks.
1. It was in the first video but I'll emphasize because it is important: During the first step when you boil the rice first to have it cook, it mustn't cook all the way or the result will be a different type of dish. It has to be Al dente (like Pasta, it has just gotten soft but it is not completely soft) before rinsing it.

2. The duration for the second part where you put the rice back in the pot to cook (https://youtu.be/aeThg8k1-fw?t=261) depends on the type of rice, the video used 1 hour. But generally I'd use 30 to 40 minutes.
Also at the very beginning of this step I'd increase the heat to high for a couple of minutes while being careful not to burn it. Then lower it to medium/low and let it cook for 30 minutes.

Although saffron would make it taste and look better (color-wise) but it is not mandatory. You could even use potatoes or any type of thin bread like what we call Lavash as your Tahdig.
Just slice the potato into thin (like 4-5 mm) slices and place them at the bottom of the pan before pouring the rice on top.

The fried potato Tahdig is actually much better than plain ol' rice Smiley


It doesn't look that hard actually, just that to get it done perfectly is not easy ... I will give it a try  using this guide plus the video aswell, but  I still don't know what will give it colour or that just the bottom that  has  the colour .
Hence did you cooked that yourself, it looks good  Smiley I will try the potato Tahdig  aswell since I can't get saffron over here.. just that I still don't know what will give it the whole colour like what you posted because all videos I've seen has two layers (one -white) but what you  posted is blend

I think aethestics would be a fore runner and the judges discretion in relation to their knowledge about the dish

Wonderful idea and indeed Nigerian dishes is worth every hype it's getting on the internet space. This period is already a season for enough eating and drinking so am gamed, let me see if my famous native Banga soup will meet the eyes of the judges or food critic  here.

Simple question @Mia Chloe please what's the criteria or areas in which the dishes would be judged to actually get or know a winner, I mean since it's food, I thought it's normally judged on the taste of it but seeing that can't be possible would be interesting to know how?

There are so many basis like the presentation of the actual dish prepared, I mean if you are cook you will certainly know a good dish facially of you see one. The recipe for preparation, method of preparation and also the finish products would go a long way and most importantly I think package and presentation gives an extra edge although Mia Chloe can still chip in some ways to qualifying the dishes that would be submitted.

This is a good initiative that is not only fun. It will be educating and help many to learn new delicacies during submission. Xmas is less than a day to go and the love is already in the air.

...For example in this recipe, step 6 is lacking that Tahdig step, and it is also using the wrong pan for it; non-stick pans work best to get the best Tahdig. The same site has some info on that:

I used لوبیا پلو (means green-bean rice) as the search query because it also uses tomato[paste] so it looks similar to the dish in OP, visually speaking.

I think I agree to what the O.P of this thread just suggested above, as it won't be bad if this thread contains both the discussion and submission of the already cooked Nigerian dishes by members of our community, while we creates another thread specifically for the voting proper. As If only O.P had created a spot at the first comment of this thread, that would have been used for the display of individual submissions by members for anybody who visits the first page of this thread.

However, this was actually an excellent initiative you made @ Mia Chloe, and as such, I woundn't mind booking a flight just to come eat fried rice and chicken by anyone who is done cooking, and invites me over..

We can't guard against it; it's better to be helped than to steal images from the internet; presenting the method of preparation is what counts most. Similar to the pizza contest, what you do behind the scenes is nobody's business; just show the preparation procedure. Grin

Yes, food aesthetics will be a big factor it an online contest.
