They are trying to minimize the losses by doing so. Closing the bounties before the actual period shows that the team was not prepared for this slump and were looking for some big investments but once they didn't got it, they just decided to quit the project.
There are two causes here, or people who do not know how to lead a project and are trying to raise funds at the expense of a mediocre idea or is it a scammer. In both cases, first read the information on how to select the bounty correctly. Because in solving a problem, you first need to start with yourself. When you learn to distinguish a quality project from a poor quality one, then immediately this problem will decrease for you.
Usually bounty campaigns end together with the token sale and nowadays they are usually prolonged as the sale is also prolonged because of the market conditions if the project has not reached it`s soft cap.
I was participant of a bounty where the opposite happened: after they has reached the hard cap they prolonged the bounty.

maybe bounty that you follow has reached hardcap when running ICO but you are late or don't follow information on the telegram or maybe they are delaying ICO so bounty also ends
I think there is a personal reason for that or it just they follow the law since mandatory is that the workers should open for 40 hours of work or 5 days.

The point is that any bounty campaign is related to ICO of the same start up. So when the ICO ends usually the bounty campaign is over as well. And very often it happens that a company reaches its hard cap before the end date of the ICO, so it finishes earlier and as the consequence the bounty campaign also ends before the announced date.
if that happens often, the bounty campaign closes before the deadline. this is most likely the project is closed or the project has reached the specified ico target.

its simple they dont want to pay more because they reach their goals for the campaign thats why they close it early 
Bounty campaign closing before their week end was happeninng at a time now, the opposite is the case. Bounty campaign are now dragging their campaign unnecessarily! The average time for period if campaign now is between six to twelve months!

yes the situation is indeed possible. but in some cases, the project bounty stopped but for ico sales it was still running. it made sales take place without a bounty campaign, maybe they thought it was not good to continue the campaign without adding rewards for bounty hunters so the team would decide to complete the bounty campaign.

Hmm, maybe there is some problem form the internal team of this project that affects the project, or their project already successfully reached the target (hardcap), and then at the worst case their project is SCAM so they decided to run away and let the bounty ends without paying their bounty hunters...

There are several factors on which companies bounty closes earlier than the stated time. There could be a couple of reasons that could be leading to the close of all of the campaigns before their week ends, they are basically doing the bounty campaigns so that they can promote the coins to people to invest to be able to raise the money that they need for their coins and if they are done raising their target money then they are going to end the bounty campaign early
