I am currently trying to find a solution for the dell 2100 psu's if its possible to get a breakout box for them
Not sure a breakout board is available for it, but you can still wire it as you wish. Here is the trick to start it, if you don't already have it.

I don't have one at hand to design the board, I'll probably design one for the HP DL 580 g3 1300w PSU that I use for almost everything that needs 12v, they are great and I sourced some for less than 40€ where the Dell 2100 are over 100€. The only downside is that the plug to connect the boare to the psu is hard to find in small quantities and cheap.
For those not familiar with server PSU, please note that they are using specific power cable. It's often a C20 plug, if I'm not mistaken.

I've used this specific product and have been very pleased.
