i am long term holder so i have big targets for my alts, i decided some values each of them, and i will sell them when they reach this target price.
I don't have a particular formula, I don't want any complicated things that is why I just sell my coin whenever I see it's on high value, but don't get me wrong it's just that the value of altcoins always depend in Eth or BTC and we all know that this two coin is always in volatile state, so when the opportunity of high value comes, I will always grab it.
It seems to me that you need to learn more about a particular project, analyze information about it, in order to understand the price that can be achieved in the future.

A token can go up with high return but selling or still hold depend solely on what you know because some goes up and dip easily and once it does you can get in red so first is to know the chart and don't be greedy to take profit and also don't be too emotional when you see token mooning already and you don't know if it can turn or if it still going more up then that will determine your move , just be active and work with your mind in decision taking.
If I get a profit of about 30% from a specific token, then I prefer to sell it, and not continue to risk with its hold in the future.
I will always explore the coin if it has great potential. I only choose a coin that has a real product and a strong development team. If the coin does not work or changes in movement within 2 years, I will sell it and find another good coin. I'm a long term holder so it's up to you.

Personally for me, I usually have a target price for my coin and ones it get to this, I sell because it is not good to be greedy as you may lose so much in the process and if the market falls, it is good to be patient and wait for the market to recover before you sell. I think ones you are able to make reasonable profit on your investment, it is better to sell and you can buy back when the price is low.
