LAToken can just not show the real identity of the trustees. Saying that they are highly respected leaders of the market will be enough.
They risk to be exposed to public dishonor everyday then. Dishonor because they are involved in the platform which in this scenario may easily be a "place to sell stolen cars" - that's your words.
You think that by just hiding their real identity you will compensate for these risks?

Can I tokenize, and then actually sell my used car using the LAToken platform?
You see, when you tokenize it it's similar to a future contract. You should buy your LABT back on the settlement date. And if you don't do so, it's actually being sold. So the answer is yes.
As for cars, I think it's technically possible, but to be implemented in the future.

As for countries I suppose it would be better to add a factbook on legal issues for each country.

As for the blockchain technology the LAT team combined the most recent advances. So I believe when it will come to introduction of some other tech they will do the same.

Maybe some neural networks tools? I've read in the WP that the technical details of the LAT implementation allows the developers to introduce them.
This is high likely. And maybe some newsfeed concerning the economic situation in the countries in which the bought assets located at.
