One of the blades in one of my S1s doesn't seem to come up with a temperature value, but it seems to be mining ok. This unit seems a little hotter than the other one (55 vs 53/49), and the fan is on constant 3600. Is it something I should be concerned about?
My PSUs are a corsair CX750M and CS750M.
No, that should be fine. You'll be able to feel on the heatsink that the side closest the fan is significantly cooler than the other side, so temps will vary anyway. I've noticed that same unit is a lot louder than the other one, even though the quiet one is reporting 3200rpm and the loud one 3600...could ~400 rpm difference make all that noise? or is it likely the fan is a bit dud?
Also, what are the safe operating temps of these puppies?
400rpm would do that, its diminishing returns in turns of airflow but the air gets more and more turbulent. There's a temp on the github, can't remember off the top of my head.

Have not been able to get my AntMiner S1 to show up in MultiMiner. It there some steps I need to take in order for it to show up? Anything need to be setup in the backend? I got it working and it is mining just fine, but would like to see it in Multiminer.

Each S1 Antminer has 2 X 6 pin PCIE connections. One connection per blade.
The reasonable declaration for E.U Customs means that Bitmain convert the BTC price you paid him to USD ( U.S. Dollars ) and declare that on the Customs form. This means you will have to pay your Countries import charges based on that Dollar value.
For the E.U. they declare full value for what you have paid. They will not declare a lower value for E.U. Customs.

NO. You can't use a molex connector, it will cause a fire. Normal wifi
It is my understanding that a 6 pin pcie is only rated to supply 75 watts of power, or a total of 150W for two connections. Please help me understand - how does this work if these devices are pulling ~400 watts?
You understand wrong. Modern GPU cards use more power than that and only have 2 PCIE power connectors.
+1 6pin connector=75 watts-8pin connector=150....add together,75+150=225....Most cables have 1 of each on them.
So if you just use the 6pin your cable will be able to support 225 watts,but the cable & PSU is actually capable of up to 300 watts safely(assuming min AWG of 16-14,I think that gauge is correct)
DO NOT USE ADAPTERS!!!!!!!!!!! ONE CABLE PER BLADE ONLY!!!!!!!!!

I just ordered Corsair AX1200 to run two OC-ed Antminer S1s. Hopefully that should be enough juice but newegg seems to have a good deal on the CX600. So also ordered that
